Carrot Cake Energy Bites

These carrot cake energy bites are great for an extra burst of energy in your afternoon.
INGREDIENTS
1 cup shredded carrots
1/2 cup pited dates
1 cup rolled oats
1/3 cup finely chopped almonds
1/3 cup coconut flakes
1 tsp ground cinnamon
2 tsp vanilla extract
1/2 tsp nutmeg
1/2 tsp sea salt
METHOD
Stir together first 5 ingredients.
Form the dough into tablespoon-sized balls, dip in coconut flakes, and refrigerate an hour before eating.
